Pork Tacos

Ingredients
- to make it spicy:
- 2 tbsp extra-virgin olive oil
- 2 small onions, finely chopped
- 1 lb ground pork (I've done this with beef, but I'd recommend trying turkey if you can't find pork; the beef wasn't very good)
- 1 tbsp ground paprika
- salt and pepper
- 1 (10 oz) package frozen corn, thawed
- 2 tbsp finely chopped cilantro (It's imperative you use fresh for this)
- juice of one lime (bottled will do)
- 8 oz shredded monterey jack cheese
- add cayenne to pork
- add chopped hot peppers to pork (I've never done this, but I know it'd be good)

Preparation
Step 1
In large skillet, heat oil over medium heat. Add half the onions and cook until softened, about 5 minutes. Add pork and paprika (and cayenne and/or hot peppers) and cook until browned, about 8-10 minutes. Season with salt and pepper.
Warm tortillas in the microwave. In a medium bowl, combine the thawed corn, remaining raw onions, cilantro and lime juice. Toss to coat. Season with salt and pepper.
Serve each tortilla topped with cheese, meat, and corn salsa.
