Ham, Peas and Potato Casserole

Ingredients
- 1 Cup Chopped Celery
- 1/2 tsp. Salt
- 1 1/2 Cups Boiling Water
- 1 1/2 Cups Potatoes, cubed
- Milk
- 1/4 Cup Butter or Margarine
- 1/4 Cup Chopped Onion
- 1/4 Cup Flour
- 2 Cups Cubed Ham
- 2 Tbs. Parsley
- 1 Cup Cooked Peas
- 1/2 Cup Sharp Cheese, grated

Preparation
Step 1
Add chopped celery and salt to boiling water. Cook for 10 minutes. Add potatoes and cook 15 minutes longer. Drain and reserve liquid. Add enough milk to potato water to make 1 1/2 cups. In a large saucepan melt butter. Add onion and cook on low heat until it turns yellow. Add flour and blend well. Gradually add liquid, stirring constantly until sauce thickens. Boil for 1 minute. Remove from heat and add ham, parsley, celery, potatoes and peas. Spoon into greased 1 1/2 quart casserole dish and top with grated cheese. Bake Uncovered at 325 degrees for about 30 minutes or until hot and bubbly. If refrigerated before baking, bake at 350 degrees for 45 minutes.
