Tuscan Pork Roast

Ingredients
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp fennel seeds, crushed
- 1 tbsp dried rosemary, crushed
- 1 tsp salt
- 1/4 tsp pepper
- 1 boneless pork loin roast (3 lbs)

Preparation
Step 1
1. In a small bowl, combine first six ingredients and rub all over pork roast. Cover and refrigerate overnight.
2. Place roast on a rack in a shallow roasting pan and bake, uncovered at
60 degrees for 1-1/2 hours or until a meat thermometer reads 160 degrees. Baste occassionally with pan juices. Let stand 10 minutes before slicing.
