String Bean, Potato and Sausage Casserole

- 3 cans french cut string beans
- 6 or 7 medium potatoes
- 1 pound link sausage
- 1 onion

Step 1
Cut potatoes into cubes. Finely chop onion. In a 4 quart pot, on medium high heat, saute onions in cooking oil until they are clear. Slice sausage into pieces. Add sausage to onions, stirring frequently, just until sausage begins to brown. Add string beans (with the juice from the cans). Salt and pepper to taste. Add potato cubes, and lightly salt potatoes. DO NOT STIR. Bring to a boil. Once boiling, reduce to medium heat, cover and cook for approx 30 minutes until potatoes are soft. Remove cover, stir all ingredients, let cook for 15 more minutes and serve.
