Slow Cooker Red Snapper Veracruz for Two

Ingredients
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 1/2 jalapeno pepper, minced
- 1/4 teaspoon dried oregano
- 1/8 teaspoon ground cinnamon
- 2 large tomatoes, diced
- 1 table spoon capers
- 1/4 cup sliced stuffed green olives
- 1/2 cup tomato juice
- 1 Tablespoon freshly squeezed lemon juice
- 2 six ounce red snapper fillets, or other white fish.

Step 1
1. Combine all the ingredients except the lemon juice and snapper in the slow cooker.
cover and cook on low 6-7 hours.
2. Stir in the lemon juice, and then place the snapper in the slow cooker. Cover and cook on high for 15-20 minutes or until the fish flakes when tested with a fork.
Serve Immediately .
