Ingredients

  • 6 strips Bacon
  • 2 lbs russet Potatoes, peeled
  • 1 1/2 cups frozen Peas
  • 1/2 cup diced Sharp Cheddar
  • 1/2 cup Mayonnaise
  • 2 tbsp prepared yellow mustard
  • 1/2 tsp onion powder
  • Salt and Cayenne to taste

Preparation

Step 1

Bring pot of salted water to a boil.
Cook bacon until crisp; drain on a paper towel and crumble; set aside.
Quarter potatoes and slice into 1/4" thick slices.
Boil potatoes for 6 minutes; Rinse and drain well. Transfer to a large bowl.
Add cheddar and peas;toss until mixed.
Combine mustard, mayo, and oinon powder in a seperate bowl.
Gently fold mayo mixture into potato mixture.
Season to taste with salt and cayenne.
Chill until ready to serve.
Prior to serving garnish w/crumbled bacon.
