Ingredients
- 3/4 c. flour
- 2.5 lbs lean stewing beef or lamb
- 2 tbls vegetable oil
- 2 - 3 large potatoes, peeled and cut into bit sized pieces
- 2 - 3 large carrots, peeled and cut into bit sized pieces
- 2 large yellow onions, quartered
- 1 - 2 sprigs of thyme
- 2 c. Guiness Stout
- 1 tsp salt
- Chopped fresh parsley, garnish

Preparation
Step 1
1) place the flour in a bag and shake beef pieces in it to coat.
2) Heat oil in a skillet and brown beef, transfer to paper towels to drain
3) Place all ingredients in the crock pot, pour the stout over everything and let cook for low on 8 hours. If you like firmer vegis cook the beef in the stout for one hour & then add them.
Serve with crusty bread
