Sun Dried Tomato and Feta Cheese Spread

Ingredients

  • 2 sticks cold butter, cut into pieces
  • 12 oz Feta Cheese, cut into pieces
  • 8 oz Cream Cheese, cut into pieces
  • 2 cloves garlic
  • 1 shallot
  • 1/2 cup pine nuts, toasted
  • 1 cup minced sun-dried tomatoes
  • 1 cup pesto
  • White pepper, to taste

Preparation

Step 1

Combine the butter, cheeses, garlic, and shallot thoroughly in a food processor or mixer. Season mixture with white pepper.
Oil a 4 or 5 cup mold (with straight sides) Line with plastic wrap. Layer in the ingredients in this order:
½ " pine nuts, then sun-dried tomatoes, pesto, cheese mixture. Repeat until the mold is full—usually twice or three time if mold is small.
Fold plastic wrap over the top and press gently to compact the layers. Chill until firm—about 2 hours. Remove from mold by dumping out onto serving plate and removing plastic wrap. Enjoy! Keeps well up to 5 days in advance.
