Ingredients
- 1 cup all-purpose flour
- 1/2 cup water
- 1/2 cup milk
- 2 Tbsp baking powder
- 1 tsp salt
- 1 tsp Penzey's Northwoods Seasoning
- Fish: 1 lb tilapia fillets (or similar)
- Fry oil: 1/2-1 gal peanut oil

Step 1
Batter:
Whisk together flour, baking powder, salt, and seasoning.
Mix Milk and Water
Slowly whisk milk/water into dry mixture until smooth
To fry fish:
Heat 1/2 gal Peanut oil in 1 gal or larger pot (3" deep oil) to 375 degrees.
Pat dry fish fillets.
Dredge fish through batter, fully coating each fillet.
2 fillets at a time, gently drop in hot oil, cook ~4 minutes until golden brown.
Cool on paper towels to absorb excess oil.
