  • 15 Oz Ricotta Cheese
  • 1 Med Garlic Clove, Blanched And Minced
  • 1/2 Tsp Salt
  • 1/4 Tsp White Pepper
  • 1 Cup Fresh Basil Leaves, Minced
  • 6 Large Tomatoes
  • ----- Garnish -----
  • Lettuce Leaves
  • Whole Basil Leaves

Preparation

Step 1

Place ricotta, garlic, salt and pepper in a blender or food processor and puree. Mix in the basil leaves. Transfer to a bowl, cover and refrigerate overnight. Line a round platter with lettuce leaves. Slice tomatoes about 1/4 inch thick and place in overlapping circles around platter. Spoon ricotta mixture into the center of the platter. Garnish with whole fresh basil leaves.
