Low Carb Taco Salad

Low carb taco Tuesday. How you ask? Omit the taco shells place the middles in a bowl and you have a fantastic taco salad without all the carbs.
I love chili seasoning and chili powder is actually a fairly healthy seasoning, with significant amounts of several beneficial nutrients such as vitamin A, vitamin C and minerals. Be very careful thought and read your labels as chili powder can be fairly high in sodium. Or even better yet make your own blend.
I used lean ground beef for the family but you can also use ground chicken, turkey or firm cubed tofu for a vegetarian option.
There are 5.6g net carbs, 39.5g protein and 9 Weight Watchers points.
Ingredients
- 1 pound ground beef
- 8 green onions, white and green parts separated into two piles, chopped
- 1 clove garlic
- 1 tablespoon chili powder
- Salt, to taste
- Pepper, to taste
- Spring mixture
- 1 medium tomato, chopped
- 1 avocado, diced
- 1 1/2 cups cheese, grated
- 1/2 cup sour cream
- 1/2 cup salsa

Step 1
Cook beef in skillet with chili powder, white part of onions, garlic and salt and pepper.
Mix together the lettuce, tomato, avocado, green onion, and olives. Add the meat and cheese and toss it together. Top with salsa and sour cream.
