Ingredients
- 1/2 cup brown lentils
- 1 small onion
- 125 g pumpkin, steamed
- 1 cup wholemeal breadcrumbs
- 1 zucchini, grated
- 1/2 cup rolled oats
- 1 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp black pepper

Preparation
Step 1
Soak lentils overnight. Drain. Cover with water, bring to the boil and simmer until tender. Drain and cool.
Chop onion well, add the lentils and pumpkin and mix well (can use food processor)
Add breadcrumbs, zucchini, oats, curry powder, salt and pepper.
Mix well. It may be necessary to add more oats or crumbs if the mix is too mushy.
Shape into 12 patties.
Leave on tray in fridge to 'set' for at least 1 hour
Fry until golden brown, turning once carefully.
Great for lentil burgers on toasted buns with salad. Spread the buns with hommus and spread some sweet chilli sauce over the cooked patties.
