Broccoli Balls on Tomato Slices

Ingredients

  • 1 10 ounce package of frozen, chopped broccoli
  • 6 tablespoons butter or margarine melted
  • 3 eggs beaten
  • 1 cup stuffing mix
  • 2 tablespoons onions chopped
  • 1/4 cup Parmesan cheese grated
  • 1/4 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1 1/2 teaspoons lemon juice
  • 1/2 cup Swiss cheese shredded
  • 3 tomatoes cut in 4 slices each

Step 1

Cook broccoli, drain, and squeeze out excess moisture. Combine remaining ingredients, except Swiss cheese. Mix well and let stand for 30 to 60 minutes. Form into 12 balls and freeze. On each tomato slice place a broccoli ball. Place on cooking rack to keep out of juices. Microwave on high for 6 to 8 minutes, rotating 1/4 turn after 3 minutes. Check broccoli for hotness. Pack Swiss cheese on each broccoli ball. Microwave on high until cheese melts (about 1 1/2 minutes).
