- 2 cups cooked, mashed sweet potatoes
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter
- 1 cup shredded coconut
- 10 marshmallows

Step 1
Blend sugar, cinnamon and butter with mashed potatoes until smooth and well mixed. To form balls, firmly coat each marshmallow with potato mixture until well covered. Then roll each potato ball in coconut. Put balls in a buttered baking dish and bake at 350deg about 5 to 10 minutes or until marshmallows in center become soft, but not melted.
