  • 1 Tbsp Vegetable Oil
  • 1 1/4 Cups Shallots (4oz)Thinly Sliced
  • 3/4 Cup Mayonnaise
  • 3/4 Cup Sour Cream
  • 4 oz Blue Cheese, Room Temperature

Step 1

Heat oil in heavy medium saucepan over medium-low heat. Add shallots. Cover and cook until the shallots are deep golden brown, stirring occasionally, about 20 minutes. Cool. Whisk together the mayonnaise and sour cream in a medium bowl to blend. Add blue cheese (in small chunks) and with a rubber spatula, stir and mash until smooth. Stir in the carmelized shallots and season to taste with salt and pepper. Cover and refrigerate for two hours to let the flavors blend. Can be made two days ahead, keep refrigerated.
