Ingredients

  • 12 medium potatoes, peeled, cooked and hot
  • 1 8-oz. pkg. cream cheese, at room temperature
  • 1/4 cup butter or margarine
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 eggs, lightly beaten
  • 1/4 cup chopped onions, optional
  • 1 tsp. salt
  • dash pepper, optional

Step 1

In large bowl, mash hot potatoes with a mixer. When all lumps are removed, add cream cheese in small pieces, and then the butter. Beat well until the cheese and butter are both melted and completely mixed. Add the sour cream.

To the milk, add the eggs and onions and then add the potato mixture along with the salt and pepper. Beat well until light and fluffy. Place in a greased 9-inch round casserole and refrigerate several hours or overnight if not using immediately.

Bake in a preheated 350 degree oven for 45 minutes or until lightly browned on top.
