Hoisin Pork Tenderloin

Ingredients
- 2 boneless pork tenderloins, about 3 pounds
- 1 T. olive oil
- 1 t. kosher salt
- 2 T. Asian seasoning (such as McCormick Perfect Pinch Asian Seasoning)
- 2 T. olive oil
- 1 red onion, cut into 8 wedges
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 cup hoisin sauce
- 1/4 cup rice vinegar
- 2 T. Asian hot chile sauce (such as Sriracha)
- 2 T. dark sesame oil

Step 1
1. Rub pork with 1 T. olive oil. Sprinkle with salt. Rub with Asian seasoning. Brown pork in 2 T. hot oil in a skillet over medium-high heat 3 - 4 minutes on each side.
2. Place pork in the bottom of a 6-quart slow cooker. Arrange onion and peppers on top of pork. Whisk together hoisin sauce and next 3 ingredients. Pour over pork.
3. Cover and cook on HIGH 4 - 5 hours or until pork is fork-tender. Let pork stand 10 minutes. Slice pork, and verve with vegetables and sauce.
