Pasta Fagioli

This recipe for Pasta Fagioli is as close as I can get to Olive Garden's recipe. Simply delicious! The recipe is easy to double for larger families.
Ingredients
- 1 1/2 teaspoons olive oil
- 1 pound ground beef
- 3/4 to 1 cup onion
- 3/4 to 1 cup carrot, julienned
- 3/4 cup celery, diced
- 24 ounces tomatoes, canned and diced
- 1 (15-ounce)can red kidney beans
- 1 (15-ounce) can white kidney beans
- 44 ounces beef stock or beef broth
- 1 1/2 teaspoons oregano
- 1 1/4 teaspoons pepper
- 2 1/2 teaspoons fresh parsley, chopped, or dried parsley
- 3/4 teaspoon tabasco sauce, or to taste
- 24 ounces spaghetti sauce
- 1/2 to 3/4 cup dry pasta shell macaroni or pasta of your choice

Step 1
Sauté beef in oil in large pot until beef starts to brown. Add onions, carrots, celery and tomatoes-- simmer for 10 minutes.
Drain and rinse beans and add to pot.
Add beef stock, oregano, pepper, tabasco, spaghetti sauce and noodles to pot. Stir. Continue to add parsley.
Simmer until celery and carrots are tender, about 45 minutes.
Double the recipe for larger families!
Enjoy with garlic bread sticks.
