Baked Bacon
Found this on the internet. Tried it and it worked well! I tried both baking it on parchment paper and on a cooling rack. Preferred the cooling rack method. However, next time I would rub coconut oil on the cooling rack before using to help with cleanup. After baking, I also stuck the pan with the grease on it in the refrigerator and it hardened pretty quickly. Then rolled up the parchment paper and threw it away. Made cleanup go pretty quickly.

Step 1
Preheat oven to 400 degrees. Put parchment paper on bottom of rimmed baking sheet and/or set a cooling rack inside of baking sheet, then lay the bacon strips flat, making sure pieces do not overlap. Bake until crisp and browned, 15 to 18 minutes, rotating sheets once. Transfer strips to a paper towel to drain. To make pepper bacon, sprinkle bacon with brown sugar Nd fresh ground pepper before baking.
I used my convection oven at 400. Next time, try 375.
