Brilliant Sautéed Broccoli

Ingredients

  • 1 pound broccoli florets (If you're using pre-cut broccoli, be sure to cut any larger florets into smaller pieces for even cooking.)
  • 2 T olive oil
  • 1/4 t. red pepper flakes
  • 1/2 t. kosher salt
  • 1/8 t. freshly ground black pepper
  • 1/3 cup finely grated parmesan cheese

Step 1

Bring a pot of salted water to a boil. Fill a large bowl with ice and cold water. Put broccoli in boiling water (with a handled strainer, if you have one) and cook until bright green, 1-2 minutes. Quickly drain and transfer to ice water immersing broccoli completely for 1-2 minutes to stop cooking. Drain broccoli well and spread out on paper towels to absorb excess moisture.

Heat oil in a large skillet over medium high heat. Add pepper flakes and cook 1 minute. Add broccoli, salt and black pepper, and cook, stirring, until broccoli is heated through, about 3 minutes. Toss with cheese and serve.
