Stuffed Pork Tenderloin

- 4 Cups Soft Bread Cubes
- 1/4 Cup Butter
- 1/4 Cup Chopped Onion
- 1/4 Cup Chopped Celery
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 1 tsp Poultry Seasoning
- 2 Pork Tenderloin

Step 1
Preheat oven to 350 F. Melt butter and add onion and celery. Cook slowly until soft. Add seasoning and toss with bread crumbs.
Take two pork tenderloin and split each lengthwise on one side. Open out and lightly crisscross with a knife. Pound and flatten to about 1/2 inch thick. Heap and pack stuffing on one tenderloin and put the other on top. Skewer edges together or tie with a string to keep stuffing inside (toothpicks work well if you have nothing else). Sprinkle with salt. Put on a rack in a baking pan. Bake one hour. Check towards the end to make sure the top isn't getting too brown. If so, put a loose piece of tinfoil over it.
