Pork Medallions Tuscan Style

Ingredients
- 3/4 lb pork tenderloin, cut into 1 inch slices
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 T butter
- 2 thin slices prosciutto,chopped
- 2 garlic cloves, minced
- 1/2 tsp dried sage leaves
- 2 T balsamic vinegar
- 1/2 c whipping cream
- 3/4 c chopped plum tomatoes

Step 1
Sprinkle pork with salt and pepper. In a large skillet over medium heat, cook pork slices in butter until no longer pink. Remove, set aside.
In the same skillet, saute prosciutto in the drippings until browned. Add garlic and sage, cook 1 minute longer. Add vinegar to loosen browned bits from pan.
Stir in the cream and bring to a boil. Reduce heat, cook and stir for 1 to 2 minutes until slightly thickened. Add tomatoes and pork, heat through. Serve each piece with a little sauce on top.
