Ingredients
- FRITTERS:
- 1-pound sweet potatoes, peeled and cut into 1/2-inch pieces
- 1 egg
- 1/4 cup packed brown sugar
- 2 tablespoons butter
- 1 cup all-purpose flour
- 1/3 cup fine dry bread crumbs
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- vegetable oil for deep-fat frying
- YOUGURT-CHIVE DIPPING SAUCE:
- 1 (6-ounce) carton plain low-fat yogurt
- 1 tablespoon snipped fresh chives
- 1 clove garlic, minced
- salt to taste
- ground black pepper to taste

Step 1
FRITTERS:
In a covered large saucepan cook sweet potatoes in enough boiling water to cover for 12 to 15 minutes or until very tender. Drain and cool slightly.
In a food processor combine sweet potatoes, egg, brown sugar, and butter. Cover and process until smooth.
In small bowl stir together flour, bread crumbs, baking powder, and salt. Add flour mixture to sweet potato mixture. Cover and process just until combined.
In a deep-fat fryer or large heavy saucepan heat 1 inch oil to 350°F. For each fritter, drop 1 tablespoon of batter into hot oil.
Fry, a few at a time, about 2 minutes or until fritters are golden, turning once.
Remove with a slotted spoon and drain on paper towels. Serve warm with Yogurt-Chive Dipping Sauce.
YOUGURT-CHIVE DIPPING SAUCE:
In a small bowl combine yogurt, chives, and garlic. Season to taste with salt and ground black pepper.
