Aunt Nadine's Sweet Potato Pie

If you do not like a sweet pie then this is not the pie for you. This recipe was inspired by my Aunt Nadine. She would make her pie with a graham cracker crust. Yummy!!

Ingredients

  • 3 pounds sweet potatoes
  • 2 1/2 cups sugar -- to taste
  • 1 teaspoon nutmeg
  • 1 1/2 sticks butter
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1/2 cup 2% milk
  • 3 graham cracker crusts or frozen deep dish pie crusts, thawed

Preparation

Step 1

Preheat oven to 400 degrees.

Boil sweet potatoes (with peel on) until they are tender and falling apart.

Peel the potatoes after boiling and then beat/mash the potatoes by hand or with a mixer on medium speed. Remove strings as you are beating the potatoes.

Mix remaining ingredients.

Pour into pie shells and bake for 50 minutes to 1 hour.
