Zucchini Cookies with Cream Cheese Frosting

These cookies are so good that you won't believe that they are made with zucchini! The cream cheese really tops off these cookies, yum!
Ingredients
- 1 3/4 cups flour
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 cup unsalted butter, softened
- 2/3 cup sugar
- 1/3 cup brown sugar
- 1 large egg
- 1 1/2 teaspoon vanilla
- 1 1/2 cups zucchini, shredded
- CREAM CHEESE FROSTING
- 6 ounce cream cheese, softened
- 6 ounce butter unsalted, softened
- 1 1/3 cup powdered sugar
- 1/2 teaspoon vanilla

Preparation
Step 1
In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger for 20 seconds, set aside.
In the bowl of mixer fitted with paddle, whip together butter, sugar, brown sugar until pale and fluffy. Mix in egg and vanilla. With mixer set on low speed, slowly mix in half of the flour mixture, then mix in the zucchini and finish by mixing in remaining flour mixture.
Using small cooking scoop drop 2 inches apart on a parchment covered cookie sheet.
BAKE 375 degrees for 13 minutes. Cool on baking sheet for 2 minutes then transfer to wire rack. Cool completely then frost.
