Olive Breedan's Rhubarb Pie

Ingredients
- Pie dough for a single crust pie
- 1 1/2 cups sugar
- 1/4 cup unbleached all purpose flour
- 1 tsp ground cinnamon
- 2 large eggs, beaten
- 3 cups chopped rhubarb ( 1/2 inch pieces)

Preparation
Step 1
Oven 400 degrees F
Use prepared crust, make your own or buy a pie shell all ready!
Combine sugar, flour, and cinnamon. Whisk in eggs. Add rhubarb and mix until well combined.
Pour mixture into pie shell.
Bake on lower shelf for 15 minutes. Move pie to middle shelf and reduce temp. to 350 degrees. Continue to bake for 1 hour or until top of pie is puffed and a knife comes out clean when inserted in center.
