Ingredients
- 2 lg red onions quartered and thinly sliced
- 1/4 c water
- 1/2 tsp salt
- 1/4 cup packed dark brown sugar
- 1/3 cup balsamic vinegar

Preparation
Step 1
combine onions, water and salt, cover and cook over medium low heat in a medium skillet about 15 minutes until onions are softened
stir in the brown sugar, and vinegar cover and cook stirring occasionally until the onions a very dark and soft and most of the liquid has evaporated. If vinegar evaporates before onions are cooked, add a spoonful of warm water. once the onion are very tender, uncover and cook for a few minutes more until most of liquid has evaporated. Stir in red pepper. let cool
scrape the marmalade into an airtight container, cover and refridgerate up to a month
