South of France Potato Salad

Ingredients
- 2 lb red potatoes...cooked and cubed
- 4 hard boiled eggs...sliced
- 8 oz cooked green beans
- 1/4 white wine, tarragon, or apple cider vinegar
- 3 T water
- 1 T Dijon mustard
- 1/4 t salt
- 1/4 t pepper
- 5 T extra virgin olive oil
- 1 c grape tomatoes, cut in half
- 1 sm red onion, diced
- 8 med kalamata olives, sliced
- 1 T capers
- 2 T fresh parsley, chopped
Details
Preparation
Step 1
Combine: potatoes, olives, onion, capers, beans and tomatoes.
Whisk: vinegar, water, mustard, pepper and oil
Pour over potato mixture and toss to coat. Add egg and toss lightly. Sprinkle with parsley
