Black bean tortilla casserole

Ingredients

  • 1 large onion
  • 1/2 cup chopped green peppers
  • 1/2 can diced tomatoes, drained (14 oz)
  • 1/2 cup picante sauce
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1 can (15 oz) black beans, drained
  • 4 corn tortillas
  • 2 cups shredded mexican cheese

Preparation

Step 1

1. in a large saucepan, combine onions, peppers, tomatos, picante sauce, garlic and cumin. Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes. Stir in beans.

2. Spread a third of the mixture in a 7x10 inch baking dish, coated with spray. Layer with tortillas (cut to size) and 2/3 cup cheese. Repeat layers. Top with remaining beans.

3. Cover and bake 350 for 30-35 minutes. Sprinkle with remaining cheese. Let stand for 5 minutes or until cheese is melted.
