Great Lentil Soup

Ingredients
- 1/4 lb. of pancetta, cut into small dice
- 1 onion, diced
- 3 stalks of celery, diced
- 3 carrots, diced
- 3 cloves minced garlic
- 2 (6 oz) pkgs lentil soup mix with seasoning pkts
- 2 cans chicken broth
- 2-1/2-3 cups water
- 1/2 pkg. of smoked turkey sausage
- 1 tbsp. tomato paste
- 1 can diced tomatoes
- Hot pepper flakes
- 1/2 pkg. of fresh spinach
- 2-3 tbsp. of red wine vinegar

Preparation
Step 1
Brown pancetta and smoked sausage in a tbsp. of olive oil, add onions, carrots, celery and soften. Add garlic and cook for about 1 more minute. Add lentils, broth, water, tomato paste, tomatoes and seasonings. Cook,covered, about 1 hour or until lentils are tender then at the last add spinach and vinegar and wilt.
