Ingredients

  • 5-6 legs and thighs – with skin
  • 1 Sweet Onion – diced
  • 2 vine ripe tomatoes – diced
  • 1 bell pepper – sliced
  • 1/4 cup ketchup
  • 3-4 tbs. teriyaki sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 1 tsp. turmeric
  • 2 tsp. ground coriander
  • 1/2 tsp. cloves
  • 1 tsp. ground cumin
  • 3 tbs. balsamic vinegar
  • 2 tbs. vegetable oil
  • Brown sugar for dusting the top of the chicken

Step 1

Preheat Oven 350 degrees:

Place the chicken in a baking pan.

Combine the onions, tomatoes, ketchup, teriyaki sauce, sugar, salt, red pepper flakes, coriander, cloves, cumin, balsamic vinegar and vegetable oil in a bowl and toss.

Pour the mixture over the chicken and place in the oven.

Bake 50-55 minutes or until the juices run clear and a nice golden color is on the chicken.
