Delicata Squash Rings
A healthy seasonal snack. Eat the skin as well, unlike most winter squash!
This recipe is perfect for those who like a balance of salty and sweet!
Rich in Vitamin's A & K to help you ramp up your immune system. Also a good source of fiber.
Ingredients
- 1 Delicata Squash
- Salt (to taste)
- Fresh Cracked Pepper (to taste)
- Garlic Powder (to taste)
- Olive Oil

Preparation
Step 1
Using a fisherman's fillet knife (for ease) cut the delicata squash into rings. Insert the knife into the seeded center and scrape around the edges removing the stringys and seeds.
Place rings on a baking sheet (I line mine with aluminum foil for cleaning ease).
Drizzle olive oile over squash rings, then season with salt, pepper and a tad of garlic powder.
Place in oven and bake at 400F for about 20 minutes.
In no time, you'll have a delicious side item for your fall meals!
