Sweet Potato Casserole

Ingredients

  • 4 ea sweet potatoes -- cooked
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 2 eggs
  • 3/4 cup evaporated milk
  • 1/4 cup water
  • 1/2 pkg marshmallows
  • topping
  • 3/4 stick butter -- melted
  • 1 cup corn flakes -- crushed
  • 1/2 cup pecans

Preparation

Step 1

Combine potatoes, suga, salt, spices, eggs, milk and water; beat until smooth. Pour into a greased casserole dish. Bake @375 for 35 minutes. Top with marshmellows and brown.

Topping:

Combine conflakes and butter until blended. Add brown sugar. Add pecans. Continue to mix until large crumbs have formed. Sprinkle over sweet potatoes. Cook 10 minutes longer. This dish can be made 2 days ahead. Refrigerate.

Sweet Potato Pie

Pour into unbaked pie shell and bake @375 for 25 minutes or until brown.
