White Cheddar And Squash Casserole

- 4 tablespoons butter, divided
- 1 medium onion, chopped
- 3 pounds yellow squash, sliced
- 2 teaspoons salt, divided
- 3/4 teaspoon pepper
- 2 tablespoons all-purpose flour
- 1 1/2 cup milk
- 1 package (10 ounce size) white Cheddar cheese, shredded
- 2 tablespoons Italian-seasoned breadcrumbs

Step 1
Directions:
Melt 2 tablespoons butter in a large skillet over medium-high heat. Add onion and saute 5 minutes or until tender.
Add squash, 1 1/2 teaspoons salt and pepper. Cover and cook, stirring occasionally, 15 minutes or until squash is tender. Remove from heat and drain well.
Preheat oven to 400 degrees F. Melt remaining 2 tablespoons butter in a saucepan over medium-high heat. Whisk in flour until smooth. Whisk in milk. Bring to a boil, reduce heat and simmer 2 minutes.
Remove from heat, stir in cheese and remaining 1/2 teaspoon salt. Gently stir together squash and cheese mixture in a large bowl.
Pour into a lightly greased 11x7-inch baking dish. Sprinkle breadcrumbs evenly over top. Bake for 20 minutes or until bubbly. Let stand 10 minutes before serving.
