Ingredients

  • cup all purpose flour
  • 2 egg whites, slightly beaten
  • 2 tsp. Dry butter milk dressing mix
  • cup fine dry bread crumbs or cornmeal
  • 3 medium green tomatoes, cut into inch slices

  • Olive oil
  • 2 large or 3 small green tomatoes
  • Yellow cornmeal, for dredging
  • Salt and freshly ground black pepper

Place flour in one shallow dish, wet ingredients in another. Cornmeal in another. Coat each slice with flour, wet then cornmeal. Cook slices for 2 minutes on each side. Sprinkle tomatoes slices with freshly shredded parmesan cheese.

Heat a small amount of oil in a sautepan over medium heat. Cut the tomatoes into 1/4-inch slices. Dredge in cornmeal, coating well on both sides. Fry in the hot olive oil until golden brown, turning once. Drain on paper towels. Season with salt and pepper, and serve immediately.
