Tomato Basil Soup

Ingredients

  • 2 14oz cans stewed tomatoes-Pureed
  • 2 10oz cans condensed tomato soup
  • 3 cups heavy whipping cream
  • 1/2 cup thinly sliced basil leaves
  • 1/2 stick butter
  • 1/2 cup Parmesan cheese
  • 1 pkg garlic croutons
  • salt and pepper to taste

Preparation

Step 1

Cook pureed tomatoes, soup, butter and whipping cream in a 2 quart saucepan over medium heat for 10 minutes stirring frequently until hot. Do not boil or soup may curdle. Stir in basil and parmesan cheese. Simmer for 10 more minutes.

Spoon into bowls and top with garlic croutons.
