Ingredients

  • 2 cups corn kernels
  • 1 cup diced red skinned potatoes
  • 1 sweet red pepper diced
  • 1 small red onion diced
  • 2 tsp cajun seasoning
  • 1/4 tsp pepper
  • 6 cups chicken or vegetable stock
  • 2 tbsp each butter and flour
  • 1 cup whipping cream
  • 2 tbsp chopped fresh chives
  • 1/2 cup shredded old cheddar cheese

Preparation

Step 1

In a slow cooker, combine corn, potato, red pepper, onion, half of cajun seasoning, and pepper. Stir in stock. Cover and cook on low for 6 hours or until vegetables are tender.

In small bowl, stir together butter, flour and remaining Cajun seasoning, stir into slow cooker. Stir in cream. Cover and cook for 20 minutes. Ladle in bowls and sprinkle with chives and cheese. Makes 8 bowls.
