Stir-Fry

1 tablespoon cooking oil
1 cup sliced fresh mushrooms
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced red pepper
1 tablespoon cooking oil
2 large eggs
1 cup left over pork chops diced
2/3 cup frozen peas
3 cups cooked rice
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons Soy sauce
sliced green onions for garnish
Heat wok or large frying pan on medium. Add first amount of cooking oil. Add next 4 ingredients. Stir-fry for about 3 min. until vegetables are soften. Transfer to bowl.
Add second amount of cooking oil to hot wok. Add eggs. Break yolks. Cook, without stirring until starting to set. Turn over. Cut egg with straight edge of pancake lifter in 1 direction. Cut across in opposite direction to make small diced pieces.
Add pork and peas. Stir-fry for 1 to 2 min. until peas are thawed.
Add rice, salt and pepper. Stir-fry for about 5 min. until rice is separated and heated through. Add mushroom mixture.
Add soy sauce slowly, stirring until mixture is combined and evenly colored.
Sprinkle with onion. Makes 7 cups
