Rockfish - Pan fried

A neighbor brought me some fresh rockfish & here is what I did… no real measurements - sorry… he also said to use Saltines, but since I didn't have any, I used Panko… it was so delicious!

Ingredients
- fresh rockfish fillet
- flour
- beaten egg (or egg substitute - what I used)
- panko bread crumbs mixed with about 1 to 2 Tablespoons Old Bay
- lemon juice (about 1/2 to 1 Tablespoon)
- Olive oil

Preparation
Step 1
Dip fillet in flour, then in egg, then in Panko with old bay.
Refridgerate for about 30 to 60 minutes.
Pour about 1/4th to 1/2 cup olive oil in pan & let heat until hot.
Fry about 10 minutes, sprinkle with lemon juice, flip & then about another 10 minutes (you might to adjust frying time - I like my fish well done).
