Acorn squash quick bread

A winter favorite that makes hiding vegetables easy! This is a bit like pumpkin bread, and you could substitute any pureed vegetable to make this.

Ingredients
- 1 cup whole wheat flour
- 3/4 cup white flour
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 3/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup applesauce
- 1 egg
- 1 cup winter squash, pureed
- 1/3 cup water

Preparation
Step 1
Sift together dry ingredients.
Beat egg and add water and applesauce.
Mix dry and wet ingredients together.
Fold in pureed squash.
Spray the bottom of a small bread pan with cooking spray. Flour lightly.
Place bread in the pan and bake at 350 degrees until a toothpick inserted in the center comes out clean.
