Ingredients

  • 3 1/2 cups all purpose flour
  • 2 2/3 cups sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 4 eggs, room temperature
  • 2 cups sweet potatoes, mashed
  • 2/3 cup canola oil
  • 2/3 cup 2% milk
  • 1 1/2 cups raisins
  • 1 cup walnuts, chopped

Preparation

Step 1

1. Preheat oven to 350 degrees. In a large bowl, whisk the first eight ingredients. In another bowl, whisk eggs, sweet potatoes, oil and milk until blended. Add to flour mixture; stir just until moistened. Fold in the raisins and walnuts.

2. Transfer to greased loaf pans. For 9x5 pans, bake 55-60 minutes or until toothpick comes out clean. For mini loaf pans, bake 35-40 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool.
