Grilled Cheddar Toasts With Red Onions & Peppers

Ingredients
- 2 Lg. Red Bell Peppers
- 2 Lg. Red Onions
- 1 Tbsp. Extra Virgin Olive Oil, plus more for brushing
- Baguette
- 1/2 C. Mayonnaise
- 3 Tbsp. Prepared Pesto Sauce
- 11/2 tsp. Red Wine Vinegar
- Salt & Freshly Ground Black Pepper
- 1/2 lb. White Sharp Cheddar Cheese, Grated

Preparation
Step 1
Preheat oven to 425. Cut peppers & onions into 1/2 in. thick slices, place on baking sheet, drizzle with olive oil, then bake for 15-20 min. or till tender. Cut baguette into 1/2 in. thick slices. Lightly brush slices on both sides with olive oil and grill or broil till toasted (2-3min.) Transfer to wire rack. In sm. bowl, mix the mayonnaise with the pesto sauce, then spread it on the slices. In bowl, mix the tbsp. of olive oil with the vinegar. Add the onions, peppers, salt, & pepper; toss. Mound mixture on slices, top with cheese, then broil for 1-2 min, till cheese is melted. Serve.
