Vegetables - Paula Deen's Squash Casserole

Ingredients
- 2 1/2 cups mixed squash ( 1 1/4 cup
- of yellow and 1 1/4 cup of zuchinni)
- 1 cup of chopped onion
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 2 eggs, slightly beaten
- 6 tablespoons butter, melted
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups of Ritz Crackers, crushed (or
- you can use 2 cups of crushed saltine
- crackers)
Details
Preparation
Step 1
Cook squash until tender. Add all other ingredients. Add milk and egg last.
Save some of the cheese for the topping along with crushed crackers.
Bake at 350 degrees for 1 hour.
Makes 1 quart casserole ad serves 4.
Double recipe for more servings.
