Ingredients

  • 2 1/2 cups mixed squash ( 1 1/4 cup
  • of yellow and 1 1/4 cup of zuchinni)
  • 1 cup of chopped onion
  • 1 cup of milk
  • 1 cup of shredded cheddar cheese
  • 2 eggs, slightly beaten
  • 6 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups of Ritz Crackers, crushed (or
  • you can use 2 cups of crushed saltine
  • crackers)

Preparation

Step 1

Cook squash until tender. Add all other ingredients. Add milk and egg last.
Save some of the cheese for the topping along with crushed crackers.

Bake at 350 degrees for 1 hour.

Makes 1 quart casserole ad serves 4.
Double recipe for more servings.
