Ingredients

  • 4 cups rich-tasting, fat-free chicken broth
  • 1 Tbls chicken fat or 2 Tbs diet margarine
  • 1 teas. onion powder
  • 20 ozs. fresh or frozen broccoli, chopped
  • 6 ozs. Velveeta cheese
  • 1 teas. salt
  • 1/8 teas. pepper
  • 1/3 cup Betty Crocker buds (dry) or 3 ozs. boiled potato

Preparation

Step 1

Put broth in a large saucepan; add margarine, onion powder and broccoli.

Cover, bring to a boil, reduce heat and simmer 10 minutes.

Remove 1 cup of broccoli pieces with a slotted spoon; set aside.

Contine cooking broccoli until mushy soft.

Put Velveeta cheese and potato buds in blender; add cooked broccoli mixture, A LITTLE BIT AT A TIME...puree on high until all the mixture has been pureed.

Return puree to saucepan, add broccoli pieces, salt and pepper.

Reheat, stirring constantly, until piping hot.

DO NOT BOIL

Adjust seasoning and serve.
