Ingredients
- Cake:
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups sugar
- 1 1/4 cup oil
- 3 cups grated carrots
- 4 eggs
- Frosting:
- 1 (8 oz) cream cheese (room temperature)
- 1 box powdered sugar
- 2 tsp vanilla
- 1 stick butter
- 1 cup chopped pecans

Step 1
Cake:
Mix sugar and oil; add dry ingredients and carrots. Add eggs one at a time.
Bake at 325 in (2) 9" greased & floured pans for 35-40 minutes.
Frosting:
Mix cream cheese, vanilla and butter; add sifted powder sugar and mix; then add nuts and mix.
