New Potatoes With Pepper and Brie

  • 8 oz. brie cheese, skin removed
  • 18 tiny new potatoes (about 2-1/4 lb.), scrubbed, peel left intact
  • 2 jalapeno chilis, stemmed, seeded and diced
  • Salt and black pepper, to taste

Step 1

Place brie in freezer for easier cutting. Preheat oven to 350 degrees. Put the potatoes in a med. saucepan and fill 3/4 full with cold water. Bring to a boil and boil until potatoes are barely tender, about 8 minutes. Drain. Put potatoes directly on oven rack to finish cooking, about 12 minutes. Remove cheese from freezer and cut into small chunks. In a mixing bowl, toss cheese and chilis. Remove potatoes from oven, and cut an "X" in the top of each. Season with salt and pepper and put on a heatproof plate. Top with cheese and chili mixture. Return potatoes to the oven for about 1-1/2 minutes, or until the cheese is melted.
