Blueberry Muffins

1) Preheat the oven to 375°F
- 1/2 cup (8 tablespoons) butter
- 1 cup sugar
- 2 large eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup milk
- 2 1/2 cups blueberries, fresh preferred
- 1/4 cup sugar, for topping
Grilled Scallops

Pat dry each scallop and lay them on a tray
- 20 to 25 large scallops (about 3 pounds)
- 5 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 1/2 tablespoons lemon pepper
Egg Cups

Combine cream cheese, eggs, and half & half (some people do this in a blender
- 2 egg cup molds
- 12 eggs
- 2 tbsp half & half
- 1/2 block of cream cheese
- 2 cups of gruyere cheese
- bacon pieces

Fried Rice

Mix 2 eggs and water and set aside
- 2 eggs
- 2 Tbl. water
- 3 green onions, chopped
- 3 C. cold cooked rice
- 3 Tbl. soy sauce
- shrimp, ham or chicken
Fresh Creamed Corn

Melt butter in a large nonstick skillet over medium-high heat
- 2 teaspoons unsalted butter
- 2 cups fresh corn kernels $
- 2 tablespoons minced shallots
- 3/4 cup 1% low-fat milk $
- 2 teaspoons all-purpose flour
- 1/4 teaspoon salt
Cauliflower Gratin

Preheat oven to 350 degrees
- 1 head of cauliflower, cut into small florets
- 3 Tbsp butter
- 1/3 cup flour
- 2 cups milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp chili powder
- 4 oz. Gruyere cheese, shredded
- 3 Tbsp bread crumbs
- 2 Tbsp parmesan cheese, finely grated
- 1/4 tsp dried oregano
- 1/2 tsp parsley flakes
Southern Squash Casserole

I always make sure to drain the squash really well before assembling the casserole
- 3 Tbsp olive oil
- 1 Vidalia onion, chopped
- 1 tsp minced garlic
- 1-1/2 pounds yellow squash, sliced
- 1-1/2 pounds zucchini, sliced
- 3 Tbsp butter, melted
- 1 sleeve Ritz crackers, crushed (approximately 24 crackers)
- 1 cup shredded sharp cheddar cheese, divided
- 2 eggs, lightly beaten
- 1/2 cup heavy cream
