Sweet Potato Casserole Recipe with Pecan Topping

Preparation Combine first 6 ingredients
- Topping:
- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted butter
- 1 cup chopped pecans
Ranch Stuffed Artichokes

Preheat the oven to 400 degrees
- 3 lemons; 1 zested, 3 juiced (squeezed lemons reserved)
- 4 large artichokes
- 5 tbsp extra-virgin olive oil, plus more for drizzling
- 2 oz. bacon, finely chopped
- 3 cloves garlic, finely chopped
- 2 cups fresh breadcrumbs
- 1/2 cup chopped fresh parsley
- 1 hard-cooked egg, peeled and chopped
- 1/3 cup grated Parmesan cheese
- 1 1-oz. packet ranch dressing mix
- Freshly ground pepper

- 2 1/2 cups cooked chicken, shred into large chunks
- Salt and pepper to taste
- 1 1/2 pints sour cream
- 3-6 green onions, sliced
- 2 cans diced green chilies (Ortega)
- 1 package corn tortillas
- 1 can tomato sauce
- Shredded cheddar cheese
- Sliced olives
- Optional:
- Cumin
- Red Chili Flakes
- Cayenne pepper

In a large serving dish, spread the refried beans on the bottom of the dish
- 1 16oz can of refried beans
- 1 cup guacamole
- 1/4 cup mayonnaise
- 1 8oz. container of sour cream
- 1 pkg. taco seasoning mix (1 oz)
- 2 cups shredded cheddar cheese
- 1 tomato chopped
- 1 small can of sliced olives, drained
- Tortilla Chips
