Italian Flank Steak

Directions In a small saute pan, add 1 tablespoon olive oil, onions, and garlic and cook until translucent

- 3 * 3 tablespoons extra-virgin olive oil
- 1/2 * 1/2 cup onions, diced
- 3 * 3 tablespoons diced garlic
- 1 * 1 flank steak, about 2 pounds
- * Salt and freshly ground black pepper
- 1/2 * 1/2 cup thinly julienne carrots
- 1/2 * 1/2 cup roasted julienne red bell peppers
- 1/2 * 1/2 cup julienne oil packed sun-dried tomatoes
- 1/2 * 1/2 cup julienne green onions
- 3/4 * 3/4 cup shredded mozzarella
- 1/4 * 1/4 cup chopped parsley leaves
- 2 * 2 (6-inch) bamboo skewers
- 1/2 * 1/2 cup all-purpose flour
- 2 * 2 tablespoons Italian seasoning
- 1/2 * 1/2 cup white wine
- 1 * 1 cup fire roasted tomato sauce
- 1/2 * 1/2 cup chicken stock
Zucchini Relish

- 10 cups zucchini
- 4 cups onion
- 5 tbsp. salt
- 2 1/2 cups Vinegar
- 6 cups Sugar
- 1 tbsp. Nutmeg
- 1 tbsp. Dry Mustard
- 1 tbsp. Tumeric
- 1 tbsp. Cornstarch
- 2 tbsp. Celery Seed
- 1/2 tsp. Pepper
Christmas Punch

- 3 quarts Cranberry Juice
- 2/3 cup Lemon Juice
- 2 cups Orange Juice
- 1/2 cup Sugar
- 2 bottles Vodka
- 1 quart Sparkling Carbonated Water, chilled
Beef Stroganoff

This is a fantastic quick meal that is good served over rice, or egg noodles
- Variations:
- 1 lb. ground beef
- 1/2 cup chopped onions
- 1 tbsp. vegetable oil
- 4 oz. can mushrooms
- 2 tbsp. flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 can cream of chicken soup (10 3/4 oz can)
- 1 cup sour cream
- Steamed white rice, or egg noodles, cooked
- Can substitute sirloin strips for the ground beef, fresh mushrooms for the canned, and red chili flakes for a little heat. Fresh garlic also is very tasty.
Taco Soup

Brown onions and ground beef together; drain
- Optional ingredients:
- 1 pound ground beef
- 1/2 cup onion
- 2 cups water
- 32 oz. can stewed tomatoes
- 32 oz. kidney beans
- 16 oz. tomato sauce
- 1 package taco seasoning
- Frito chips
- sour cream
- grated cheddar cheese
- Corn, olives, black beans, chiles
Grandma Eva's Cream Cheese Ball

This has been a family favorite for years, traditionally served on Ritz crackers
- Variations:
- 2 packages (8 oz) cream cheese
- 1 jar Old English cheese
- 1 Tbl. parsley flakes
- 1 Tbl. minced onion
- 1/2 cup chopped walnuts
- Garlic
- Red Pepper flakes
- Crackers, traditionally Ritz, but others will do as well
Peanut Butter Crispy Bars

For the crispy crust layer: Put the cereal in a large bowl and set aside
- 1 3/4 cups crisped rice cereal
- Nonstick cooking spray
- 1/4 cup sugar
- 3 tablespoons light corn syrup
- 3 tablespoons unsalted butter, melted
- 5 ounces good-quality milk chocolate, coarsely chopped
- 1 cup creamy peanut butter
- 3 ounces dark chocolate (60 to 72 percent cacao), coarsely chopped
- 1/2 teaspoon light corn syrup
- 4 tablespoons (1/2 stick) unsalted butter

- 2 cups uncooked elbow macaroni
- 2 tbsp minced onion
- 4 tbsp all-purpose flour
- 1 tsp salt, plus more for seasoning
- 3/4 tbsp dry mustard
- 1/4 tsp paprika
- 2 cups milk
- 3 cups shredded Cheddar, divided
- 2 ripe tomatoes, blanched, peeled, and cut into 1/2-inch thick slices
