B's Macaroni Salad...yum!

1. Bring a large pot of lightly salted water to a boil
- 1 pkg tri-color rotini; uncooked
- 1.5 cup olive oil mayonnaise
- 1/4 cup distilled white vinegar
- 2/3 cup white sugar
- 2 tablespoons yellow mustard
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 pkg frozen peas
- 2 chicken breasts; cubed (optional)
Cheddar Biscuits w/Chive Butter

1. Beat softened butter, chives, and cayenne pepper together in a bowl until well-combined and smooth
- Chive Butter:
- 1/4 cup butter, softened
- 3 tablespoons chopped fresh chives
- 1/4 teaspoon cayenne pepper
- Cheddar Biscuits:
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons cold butter
- 1 1/4 cups shredded extra-sharp
- Cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 cup buttermilk
- 1 egg, lightly beaten
Pumpkin Spice Cake w/Honey Frosting

Preheat oven to 350 degrees
- FOR THE CAKE
- 1/2 cup (1 stick) unsalted butter, melted, plus more for pan
- 2 1/2 cups all-purpose flour, (spooned and leveled)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 tablespoon pumpkin-pie spice (or 1 1/2 teaspoons cinnamon, 3/4 teaspoon ginger, 1/2 teaspoon nutmeg, and 1/8 teaspoon each allspice and cloves)
- 2 large eggs
- 1 1/2 cups sugar
- 1 can (15 ounces) solid-pack pumpkin puree
- FOR THE HONEY FROSTING
- 1/2 cup (1 stick) unsalted butter, very soft
- 1 bar (8 ounces) regular (or reduced-fat) cream cheese, very soft
- 1/4 cup honey

Almond, pine nut, apricot crumb cake 1) Preheat the oven to 180°C/Gas Mark 4
- 50g whole almonds, toasted, plus 25g sliced almonds, toasted
- 70 g pine nuts, divided
- 175 g plain flour
- 1 tsp baking powder
- 4 large eggs
- ½ tsp salt
- 200 g caster sugar
- 180 g butter, melted
- 75 ml milk
- ¼ tsp almond essence
- 70 g chopped dried apricots
Spring-time White Cake w/Raspberry filling & Cream Cheese frosting

Preheat oven to 350°F. Grease and line the bottom of three 8-inch round cake pans with parchment paper
- Cake:
- 3/4c all-purpose flour
- 1 1/2 tsp baking powder
- 9 eggs, separated
- 1 tsp kosher salt
- 3/4c sugar
- 1 - 8 oz almond paste, crumbled
- 1 1/2 tsp vanilla
- 3/4 tsp almond extract
- 1c raspberry jam
- Frosting:
- 2 cups cream cheese
- 1 tsp almond extract
- Raspberry jam (enough to color frosting and to give a hint of rapsberry)
Pumpkin Pie Parfait

Pour heavy cream into a cold stainless steel bowl and beat with an electric mixer until it begins to thicken
- 1 cup heavy cream, cold
- 2 tablespoons plus 1/3 cup C&H Granulated Sugar, divided
- 1 teaspoon vanilla extract
- 4 oz. brick cream cheese, softened at room temperature
- 1/2 cup canned pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 18 to 20 ginger snap cookies, broken into pieces*
Restaurant-Style Refried Beans

In a large stockpot, bring the beans to a boil in 8 cups water
- 1 pound dried pinto beans, picked over for stones and impurities
- 2 tablespoons grapeseed oil
- 1 large red onion, diced
- 3 cloves garlic, lightly crushed with the side of a knife blade, and minced
- 1 tablespoon Mexican chili powder
- Salt and freshly ground black pepper
- 1 tablespoon minced fresh cilantro leaves or minced fresh flat-leaf parsley

- 2 tablespoons butter

- 1 cup sour cream
